Here is my new favorite recipe. It is very nutritious AND easy! It contains protein, vegetables, and whole grain. It is from Whole Foods for the Whole Family cookbook.
Super Six Layer Casserole
1c. uncooked brown rice (or another whole grain)
1lb. browned ground beef
1/2 cup. diced onion
1 green bell pepper, chopped
1c. chopped carrots
1 zuchinni, chopped
... 1tsp. salt
1-2cups tomato juice
2-3Tbsp. Worteshire Sauce
1-2cups shredded Cheddar Cheese
1/2cup wheat germ
Layer rice, meat, vegetables in casserole dish.
Sprinkle salt and basil.
Pour over tomato juice and Worteshire Sauce.
Top with cheese and wheat germ.
Bake, tightly covered, at 350' for 1 1/2 hours.
